About Chef John

When people ask me where I got my start as a chef,
I often talk about my time in Hawai'i or my stints at
the Mansion on Turtle Creek or the Texas Club in
Dallas, but I must acknowledge that my roots in this
profession really began with my fascination of
Graham Kerr, the "Galloping Gourmet." As a small
boy, I chose Kerr over Saturday morning cartoons
and on rainy and sick days when I was confined to
the indoors.

The fascination for food and cooking that was
instilled by Kerr's quirky performances quickly
grew into a passion for experimentation and
adventure. That passion has directed every
decision I have made. As a chef, the choices I have
made in regards to ingredients, presentation and the
incorporation of a wide variety of distinct, and
sometimes previously unmatched ethnic traditions,
have reflected that passion and brought their own
special rewards, both professionally and
personally.

My culinary repertoire includes experience with
New American, Chinese, Polynesian, Japanese,
Portuguese, French, Southwest and German
cuisines. For a little "interest," I occasionally
throw in a smattering of Mediterranean, Creole,
African and traditional "Southern" cooking.

My goal is to offer my customers, friends and
family a chance to "come home"
- to take off their
jackets and ties if they wish, and to comfortably
settle in with recognizable food that incorporates
the diversity of a World Cuisine and sparks the
imagination while simultaneously warming the soul.
